So, as I made mention of earlier this week, the outfit photos have slowed down since my husband/photographer has been laid up after knee surgery. I was able to take off from work to play nurse for a week, at which time I got some house projects done AND made up some healthy healing dinners.

| So I decided to roast a whole chicken for dinner last weekend. |

| Thyme, lemon, garlic, onions, melted butter. Mixed all together and then coated over the bird. |

| The remaining "glaze" I poured right into the cavity along with lemon wedges and sprigs of thyme. |

| Side dish of asparagus and mushroom sautéed in oil and more garlic. |

There you have it. Roasted chicken with asparagus and mushrooms, with peaches and cottage cheese for dessert. Now if I wanted to be really ambitious I'd use the chicken carcass for soup, but it being summer, I'm not really in a soup-making mood. More so in a cocktails on the deck mood.
